Costa Rica Hacienda Sonora Honey

Located in San Pedro do Poas, the Alajuela Province, lies the Hacienda Sonora Estate farm. The farm has been in Alberto's family for over a century, and when he took over in the 70s, he began planting most of the land with coffee, which soon became the families main source of income. In 1999, when coffee prices were historically low, Alberto invested in a mill, and soon began experimenting with processing techniques. His experimentation has become proof that different varietals and techniques can result in different complexities in the finished cup. Today, Sonora Estate has over 20 different varietals planted on the 80 hectare farm, which additionally has over 20 hectares of forest reserve. 

Alberto and his son Diego use drying patios that are slightly different to common practice; a special mix of black tarps and black screens that lower the temperature, resulting in a slowing of the drying process. 

Overall, this finished cup has a sweet and boozy feel to it, with a bright acidity and smooth body. With a winey chocolate fragrance, this coffee has notes of Clove, Honey and Almond.
