This Coffee is named after the local Milling facility in Popayan, Located in the southwest region of Colombia, Cauca borders the departments of, Tolima, Huila, Caquetá, Putumayo and Nariño, as well as the Pacific Ocean. With the region hosting rainforests, basins and volcanoes, as well as natural parks there is a diversity of crops such as sugar cane and panela cane, potato, corn, yucca, beans, tomato and coffee, which is produced in the undulating slopes of Cauca, which are also amazing landscapes.
In Cauca, coffee is grown in small plots by local farmers. Inza is with 34 municipalities which make up the 93,000 hectares of coffee-producing farm-land within Cauca. The high altitude, proximity to the equator and volcanic soils make this region perfect for growing high-quality coffee. The land is carefully maintained by smallholder farmers usually with plot sizes under 5 hectares. Producers here selectively harvest and process coffee as the cherries reach peak maturity, with this attention to detail producing a distinguished profile with strong notes of caramel and red fruits.
