About the Producer

This is the 3rd harvest of Edwin's coffee that we’ve purchased, and we’re always struck by the consistency of the washed and honey Parainemas produced on his farm, El Plan. 

Edwin planted Parainema back in 2015 after his neighbour won COE with this varietal, and sent the first sample to Beneficio San Vicente (BSV) in 2017. The following year, with the help of BSV, Edwin prepared his first micro-lot. His coffees are always well structured with sweet, citric and rounded notes of cocoa. 

This lot has undergone a honey process.  Cherries are carefully picked by hand and transported to the wet mill.  After being de-pulped, the parchment (with sticky mucilage layer still intact) is moved to the parabolic solar dryer to dry until the required moisture/humidity level is reached.  During drying, workers turn the coffee and sort the beans by hand to remove any defective beans.
