About the Producer
Rafael Rojas Zuñiga has been living and working at his family farm Palo Grande for the last 27 years. The name Palo Grande, is inspired by the presence of several huge trees found on the property.
After learning about speciality coffee and the merits of focusing on quality, Rafa and his wife Aracely (with whom he works very closely) began experimenting with different approaches to coffee processing, rather than washing and drying as quickly as possible to facilitate a quick sale.
They now employ a dual fermentation process, fermenting the cherry in buckets or bags, pulping and then fermenting the parchment again before rinsing and drying. Rafael has also become known for his success with extended fermentations, to produce both natural and honey processed lots.
