About the Producer
A celebration of the microregion Northern Huila, this blend of lots from producers represents over 35 different farms. These producers work on farms that are quite large for the area, (averaging two hectares) and process their coffees in a traditional washed process. Cherries are fermented for 12-24 hours, before being de-pulped and fermented again for 23-36 hours. The beans are then washed and dried in mechanical dryers for 40 hours before finishing drying on raised beds for 20 days.
The result is something uncommon in Colombian coffee: a high-quality, large-scale lot that is suitable for quality-focused blends, or for featuring as a single-origin, microregional coffee that celebrates the unique terroir and character of Northern Huila.
