Honduras Sandra Trochez Catuai

The Don Amado farm is operated by Sandra Trochez and her family in Las Flores, Santa Barbara. The farm is situated beside the Santa Barbara Mountain National Park, and has consistent rainfall and cooler than average temperatures in the Honduras region.

The cherries are carefully harvested, de-pulped and dry fermented for 15 hours between 16°C to 20°C. The coffee is then washed thoroughly five times and laid out in parabolic solar dryers for around two weeks. Once the drying process has finished, Sandra and her family start hand sorting the dried coffee to remove all defects.
