Costa Rica Don Senel 35kg

TASTING NOTES: Black Currant, Dark Chocolate, Winey
PROCESS: Natural
VARIETAL: Catuai

Senel Campos Valverde and his son Alan have produced this coffee on their family farm, La Toboba. Senel's father (also called Senel) planted his first coffee trees on the 8 hectares of land in 1968, and today Senel and Adam continue to improve and expand, now with over a dozen different varietals planted on the land. And in 2016, La Toboba got it's very own micro-mill. Grown and harvested between 1450-1850masl, the cherries are picked and rinsed in clean water, and are taken through a floater separation process.

Cherries are then laid on african beds for 3-5 days depending on weather conditions. After this they are taken to a green house, where they are piled and moved around every 6 hours. This piling process can last up to 35 days.

Finally, the coffee is rested for 2-3 months, dry milled and sorted.
