About the Producer
German Reyes contributed to our Santa Barbara Natural Parainema blend in 2023. But today - he brings us a single microlot from his farm, located in the village of El Cielito, approximately 1,200 metres above sea level. We fell in love with this Anaerobic Honey microlot from German when we first cupped it.
With just under a hectare of land, German also grows avocados and plantain, with the goal of buying more land in the near future to plant more coffee.
Using only the Parainema varietal for this coffee, the cherries are put into fermentation bags straight after picking for 80 hours. The cherries are then de-pulped, and the parchment remaining is put into water to separate dry grains. Next, it gets put into a parabolic solar dryer for 15-22 days, where during this time the parchment is hand sorted to remove defects.
