About the Producer

Inheriting his coffee knowledge from his father, Salvador bought his first farm in the Yorita area. But during Hurricane Mitch, his farm suffered the effects of landslides, and his plantation was destroyed. In 2000, he moved to the Mata de Huerta area where he still resides, producing coffee and improving his 13-hectare farm. ​

​This naturally processed coffee is harvested and put directly into water, where the floating cherries are separated due to being defects. After separated, the parchment is put inside the parabolic solar dyer for approximately 20 days, during which time the cherries are hand sorted to remove further defects.
